• The fermentation and drying of the beans are key processes to extract the full potential of flavour and aroma.
• The beans should be mixed according to their characteristics.
• The drying process of “fine” beans is special and very different from the process used with common “bulk” beans. Xoco uses sophisticated solar dryers.
