Fine cocoa
Fine cocoa beans have a superior flavour and aroma. They come exclusively from cocoa trees with certain genetic characteristics. Typically they come from the Criollo or Trinitario families.
Fine beans requiere a specialized post-harvest process to extract their full potential.
Today, almost none of the existing trees in Central America are of the genetic families that can produce fine cocoa beans. To create an industry, it is necessary to first identify the few existing fine trees, reproduce them by grafting and plant them with farmers.
